Title: Papaya Salsa

Yield: 2 Cups

1tbOlive oil
3 Shallots; finely minced
3tsGinger; finely minced
1tsCurry powder
1 1/2 Papaya;peeled,seeded,chopped
3tbLime juice
1 1/2tsFresh cilantro;fine chopped

In a small nonstick saucepan, heat olive oil over medium heat. Add shallots and ginger. Stir-fry 6-7 minutes in the oil. Remove from heat and stir in curry powder until well-blended. Place mixture in a food processor, add papayas, lime juice, and cilantro. Process just until blended. Refrigerate an hour and serve. Makes about 2 cups.
